All beef sold in our shop is less than thirty months old.
The relatively small amounts of red meats not purchased directly from
the farm come exclusively from a local a company with very high
standards who are well aware of our own.
LAMB: Lambs are sourced almost exclusively from Mirlaw House
Farm at Capheaton, about 8 miles north of Corbridge. Here, well bred
Texel X Suffolk lambs are raised to perfection, indoors at this time of
year, they are fed on barley and silage mixed with molasses and a
mineral/vitamin supplement.
PORK: Always looking to improve, we have recently changed both
our supplier and the breed used, we now use superb, Large White X Duroc
pigs, all from the same Yorkshire farm. The Duroc cross, uncommon and
more costly to rear ensures our pork is sweet, moist and delicious with
crispy crackling, just like the old days.
CHICKEN: However you buy your chicken from us,
whether it be whole, a burger, kebab, drumstick or any other portion, it
has been cut or manufactured by ourselves from a whole, fresh, A grade
English chicken. With the exception of the burger, no chicken or chicken
pieces contain additives unless requested at point of sale.
Our chickens are ALWAY5 from the same, high quality source.
We do not and never have used foreign chicken or chicken pieces from any
source.
TURKEY: Fresh English, barn reared turkeys and fresh turkey
butterflies are delivered to our shop twice weekly from a farm near
Penrith in Cumberland. We do not sell either foreign or English turkey
from any other source.
COOKED MEATS: Did you know that to be legally labelled as
containing no added water or '100% meat', cooked meat needs only to
weigh no more when cooked than it did raw. Our cooked meats lose about
one third of their original weight during cooking.
Our range of cooked meats, plus white pudding savaloys etc, are all
prepared and cooked in our shops (excluding corned beef)
COOKED HAM: Not just Danish but always and only from one
Danish producer, undoubtedly the best and most consistent gammon we have
ever used. Our cooked hams have won several awards.
COOKED PORK, BEEF and TURKEY: Exactly the same fresh, prime cuts
as you would buy raw, only a little salt added, no added, colour,
flavourings, gums or any other chemicals.
OX TONGUE: is dry cured, the cure contains sodium nitrate and
nitrite and the anti-oxidant sodium ascorbate (a source of vitamin C).
We use the same cure for our pastrami and dry cured bacon.
PASTRAMI: Prime brisket, dry cured for 7 days with the
addition of fresh garlic, black peppercorns and our own blend of herbs
and spices. Not sure? ask for a sample.
With the exception of groceries, corned beef and Danish bacon,
everything we sell is cut, manufactured and or cooked by ourselves. We
do not sell any other third party product of any description.
